Description

We, the Trastaller family, have been working since 2004 according to strict organic guidelines, which have also been checked by the BIO control body BIOS since 2008. For us, working organically means working with nature rather than making the maximum profit from the soil. In our cellar the wine is gently treated and stored for several years in a stainless steel tank or in a wooden barrel for aging. In these years, the aging process is not interfered with and the wines are all fermented spontaneously, that is without adding yeast. This makes them suitable for vegans.
This storage allows us to dispense with the most varied wine treatment agents and also to vinify some varieties without sulphur. This gives each vintage of our wines a unique and special taste.
